Pumpkin Spice Cupcakes

These vegan fluffy pumpkin spice cupcakes are crowned with a cream cheese buttercream frosting. Perfect for a fall or iciness birthday celebration! Delicious as pumpkin bread too.

Ingredients

  • Wet:
  • 1/3 cup non-dairy milk
  • 1 cup pumpkin puree, unsweetened
  • 4 Tbsp vegan butter
  • 1 cup uncooked turbino sugar, natural
  • 1 flax egg (4 Tbsp water + 1 Tbsp flooring flax seed)
  • 2 tsp apple cider vinegar
  • 1 Tbsp vanilla extract
  • Dry:
  • 1 Tbsp baking powder
  • 1/Four tsp salt
  • 2 cups all goal flour
  • 1 Tbsp pumpkin pie spice
  • Cream Cheese Frosting on most sensible
